You Won the Easter egg hunt! Now what?

This is one of my favourite times of year: buds starting to appear on the trees, grass is turning green, crocuses popping up, and lambs and calves dropping at farms across the country! I also love Easter, influenced by my catholic raising? Likely! But I also love chocolate bunnies and dyeing and eating easter eggs!



I know I'm not the only one that ends up hard boiling a half a dozen too many eggs year after year. Only to look in my fridge two weeks later to see some lonely blue and orange eggs in the carton.

So what can we do with all these pretty eggs instead of eating our 5th egg salad sandwich of the week? Maybe it's regional, but in Saskatchewan, pickled eggs are kind of a staple.

From hot and saucy, to canned with sour kraut, and to the basic pickled egg - there's pickled egg flavours for everyone!
